💡 Baking powder is a leavening agent used in baking to help cakes, cookies, and other baked goods rise and become light and fluffy.
It typically contains three main components:
Baking soda (sodium bicarbonate)
An acid (such as cream of tartar)
A starch to absorb moisture and keep the mixture stable
When mixed with liquid and exposed to heat, baking powder releases carbon dioxide gas, which causes the batter or dough to expand and rise.
There are two main types:
Double-acting baking powder: reacts twice (when mixed and when heated) – most commonly used
